Ingredients

3 bananas that are fully ripe

50g unsalted butter (1/2 cup) melted

1 egg, beaten

1 tsp. instant coffee

1 teaspoon bicarbonate of soda

1 1/2 cup oats, full

walnuts, 1/2 cup

Method

Preheat the oven to 180 degrees Celsius. Mash the bananas in a bowl with the melted butter. Whisk in the beaten egg to make a smooth paste. Mix in the coffee powder and baking soda thoroughly. Now is the time to do all of the mixing and stirring.

Now add the oats and gently blend everything together. The gentler you are, the fluffier the bread becomes. Add the walnuts and gently fold them in. Place the batter in a prepared loaf pan and bake for 1 hour.

Allow for a full 50 minutes of baking time, or until a toothpick inserted in the center comes out clean. Allow to cool completely before slicing and serving with your favorite nut butter. Enjoy a delicious and healthy breakfast or snack.
