5 Best Mango Recipes You Must Try this Summer

I can’t force myself to eat a luscious, juicy, sun-kissed mango every day, as much as I want to. It’s far too sweet, at least the good type, and it gets dull after a while. Yes, I’ve had my fair share of mango shakes and mango juice, but they’re not exactly creative.

So, what can we do with a mango that is both beautiful and delicious? Of course, we can do this without hunching over a hot kadhai in the kitchen. To begin, we must select the ideal, most inventive dishes that we will want to create again and again. Second, there are those that are quick, require fewer ingredients, and require hardly no cooking.

Here’s a collection of the internet’s best mango recipes. Drinks, sweets, mid-meal munchies, and even ice cubes are available.

One-Ingredient Fruit Roll Ups

It’s even easier than it appears. Take some fresh fruit and combine it until smooth. Place it on a baking dish and bake until dry. Cut it into cylinders by rolling it tightly.

Ingredients:

A big baking tray and 4 cup diced mangoes (about 3 large mangoes).

Method:

1. Preheat the oven to 175 degrees F and line two rimmed baking sheets with parchment paper or Silpats.

2. Puree the mango until it is completely smooth.

3. Divide the puree between two baking pans if using two. With a spatula, spread the puree evenly and as flat as possible.

4. Bake for 3 to 4 hours, or until well dry.

5. You can roll them up when the purée is completely dry. If the puree is still wet, return it to the oven and bake for another 15 minutes.

Popsicles with Mango Lassi

You’ll be relieved to learn that making your own popsicles is now easier than ever. Simply mix some mangoes with Greek yogurt, milk, sugar, cardamom, and salt in a blender. Put this into a couple molds and voila! You’ve got some fantastic summer delights on your hands.

Ingredients:

2 cups diced ripe mango, 1 1/2 cups Greek yogurt, 1/2 cup milk, 2 tablespoons sugar, sprinkle of crushed cardamom, large pinch of salt

Method:

1. In a food processor or blender, combine all of the ingredients and blend until smooth.

2. Fill the popsicle molds with the blended mango mixture and freeze until solid, preferably overnight.

3. To unmold, run hot water around the exterior of the molds for a few seconds until the popsicles come out easily.

Mango Coconut Oatmeal

I can attest to the fact that this dish is simply fantastic! In only a few minutes, you get your daily dosage of both oatmeal and fruits.

Ingredients:

1/2 cup oats, rolled

1/2 cup almond milk, unsweetened

1/2 cup cubed mango

1 tablespoon coconut flakes

1 1/2 teaspoon sugar substitute

Notes: Instead of almond milk, I used ordinary milk, which tasted just as nice. I also used 1 teaspoon powdered white sugar instead of the sweetener.

Method

In a resealable jar or bowl, combine all of the ingredients. Cover and set aside for the night.

Dessert in a Glass with Mango

Bring some milk to a boil, then add cream, sugar, cinnamon powder, mango chunks, and mint. Pour the dessert into a glass, top with mint leaves, and chill until ready to serve.

Ingredients:

1 lemon, 2 medium-sized mangoes (peeled and diced), 2/3 cup sugar (juice)

Method:

Place everything in a blender and blend for 2 minutes. Freeze the mixture overnight in an ice cube tray.
